The Flavor Profile
Salt hits first and wakes up the meat. Smoky black pepper comes next. It is bold and a little sharp. Garlic fills in the middle. Coriander shows up last with a soft, bright finish. There is no sugar, so it will not burn over high heat. That makes it just as good on a hot grill as on a low and slow smoker.
What to Put It On
- Brisket: the cut it was made for. A light, even coat builds a deep, crunchy bark.
- Beef ribs and short ribs: big, fatty beef loves a big pepper crust.
- Steaks: ribeye, NY strip, and tri-tip. Season and go straight to a hot grill.
- Smash burgers: sprinkle on the patty right after you smash it.
- Pork butt and ribs: use it as a base layer, then add a sweet rub like the SmokED Bogey or Honey Putter on top.

- Vegetables, eggs, and popcorn: anywhere you would use salt and pepper.
The Brisket Method
Trim the fat cap to about 1/4 inch. Coat every side with an even layer of Bunker Rub. You should still see a little meat through the rub. Let it sit while the smoker heats up. Smoke at 250°F until the bark is dark and set, about 165°F inside. Wrap it in butcher paper. Keep cooking until it hits about 203°F, or until a probe slides in like butter. Rest it at least one hour before you slice.
Pro Tip: Layer Your Rubs
