Why We Source Our Garlic from California — Not China
Most garlic powder on the market comes from China. We source ours exclusively from California. That decision costs more, and we make it every time. Here’s why it’s worth it — and why it matters to you.
The Flavor Difference Is Measurable
This isn’t a matter of opinion. The National Food Laboratory measured allicin — the compound responsible for garlic’s signature aroma and flavor — in California and Chinese garlic using brix tests. The results:
- California garlic: 4,400 parts per million (ppm) of allicin
- Chinese garlic: 3,500 ppm of allicin
That’s a 26% difference in the compound that makes garlic taste like garlic. Blind taste tests conducted with professional chefs confirmed what the lab data showed: tasters consistently preferred California garlic for depth and intensity of flavor.
When we slow-smoke our garlic for 8 hours over hickory wood, that flavor difference compounds. Richer raw garlic produces richer smoked garlic. There’s no shortcut around starting with better ingredients.
You Can’t Trace Chinese Garlic
China produces roughly 10 billion pounds of garlic per year, grown across five major regions by approximately 1.2 million small farmers — most operating on less than two acres. Seeds are generic, fertilizer and pesticide use goes undocumented, and there is no regulatory requirement to track either.
After harvest, garlic destined for dehydrated products passes through at least five sets of hands — farmer, collector, wholesaler, open-air auction market, processing facility — before it ever reaches a manufacturer. That chain makes farm-to-shelf traceability effectively impossible. You cannot know what was applied to that garlic, where it was grown, or who handled it.
Our California supplier operates differently. They own the entire supply chain from seed to finished ingredient:
- Garlic starts as cloves in their proprietary virus-free program at their R&D facility in Hanford, California
- Planted and harvested by their own agricultural operations team, in partnership with local California farmers
- Washed, milled, and quality-checked at their processing facility in Gilroy, California — the garlic capital of the world
