The Flavor Profile

The Smoked Chuck Roast Method
Chuck roast is cheaper than brisket, cooks faster, and still shreds like a dream. Coat a 3 to 4 pound chuck roast on every side with Texas Wedge Rub. Let it sit while the smoker heats. Smoke at 250°F until it reaches about 165°F inside. Move it to a pan with a cup of beef broth and cover it with foil. Keep cooking until it hits about 203°F and a fork twists easily. Rest it for 30 minutes. Slice it for sandwiches or shred it for tacos.
Pro Tip: Trust the Thermometer, Not the Color
Coffee and cocoa make the bark dark early. It may look done long before it is. Go by the internal temperature and how tender the meat feels. Also, sugar and coffee can burn over very high, direct heat. For steaks, cook them low first, then sear them hot for just a minute per side.
