What to Put It On

  • Pork ribs: spare ribs or baby backs. The sugar builds a glossy, sticky bark.

The KC-Style Ribs Method

Pull the thin membrane off the back of the ribs. Coat both sides with Par Rub and let them sit while the smoker heats. Smoke at 250°F for about 3 hours. Wrap them in foil with a little butter and honey for about 2 hours. Unwrap, brush on a thin coat of your favorite sauce if you like, and cook 30 to 60 minutes more until the sauce sets. They are done when they bend easily and the meat starts to crack on top.

Pro Tip: Watch the Sugar

Brown sugar and molasses can burn over very high, direct heat. Cook with Par over indirect heat or at lower temps. For a grilled steak or chop, sear it first, then add Par and finish it on the cool side of the grill.
