Description
The Rub That Goes On Everything
Salt, pepper, and garlic — the holy trinity of BBQ seasoning. The SmokED Bunker Rub is a Texas-style SPG rub built on that same foundation, but with one critical difference: the black pepper and garlic aren’t just any black pepper and garlic. They’re SmokED Black Pepper and SmokED Granulated Garlic — hickory-smoked before they ever go into the blend.
That means this rub doesn’t just season your food. It carries real smoke flavor into the crust, right alongside the salt, pepper, and garlic — without you having to do anything differently.
What’s In It
Salt, SmokED Black Pepper, SmokED Granulated Garlic, ground coriander, and a small amount of rice hull anti-caking agent to keep it flowing freely. That’s the complete list. No sugar, no chili powder, no fillers. Pure SPG with genuine hickory smoke built in.
The coriander is subtle — you likely won’t identify it blind, but you’d miss it if it were gone. It adds a faint citrusy brightness that keeps the rub from being one-dimensional.
The Name
Like a golf bunker — sandy, granular, and covering everything it touches. The texture of this rub reminded founder Ed of sand in a bunker, so the name stuck. The golf theme runs through the whole SmokED Stuff lineup, built by a man who took up smoking meats the same way he approaches a round of golf: methodically, with serious attention to detail.
What to Put It On
- Brisket — the classic Texas application; apply generously and let it form a deep, peppery bark
- Steaks — press into both sides before a hard sear; the smoked pepper blooms in the crust
- Burgers — season the outside before grilling for a proper crust
- Pork chops — works beautifully on thick-cut chops over direct heat
- Roasted potatoes — toss with oil and this rub before roasting
- Vegetables — asparagus, zucchini, mushrooms — anything on the grill benefits
- Eggs — a small pinch over fried eggs is genuinely one of the best quick upgrades
- Popcorn — customer-tested and approved; the smoked pepper + garlic combination on popcorn is addictive
Gluten-Free. Dairy-Free. No MSG.
Clean label all the way through. Every ingredient is recognizable, pronounceable, and purposeful. No fillers added to stretch the blend. No artificial flavoring to fake the smoke that’s already there from real hickory wood.
Inside the Rub: What Every Ingredient Actually Does
Five ingredients. Every one visible. Every one earning its place. Here’s the breakdown.
🧂 Salt — The Foundation
Salt isn’t just seasoning — it’s chemistry. When you apply the Bunker Rub and let it rest, the salt draws moisture to the surface, then pulls it back in, carrying flavor deep into the muscle fibers. This is called a dry brine effect, and it’s the reason your brisket develops that deep, savory bark that cracks when you slice it. No salt = no bark. It’s that simple.
🌶 SmokED Black Pepper (Hickory-Smoked) — The Backbone
Black pepper on brisket is Texas law — and for good reason. Coarsely ground pepper creates a speckled, peppery crust that bites back just enough against the richness of beef fat. But SmokED’s black pepper goes one step further: it’s hickory-smoked before it ever hits the rub, so the smoke flavor is built into the spice itself — not just something you hope the smoker adds later. You’re building smoke from the inside out.
🧄 SmokED Granulated Garlic (Hickory-Smoked) — The Depth
Granulated garlic — not powder, not minced — sits at the sweet spot for BBQ. It’s coarse enough to contribute texture to the bark, but fine enough to fully bloom and caramelize during a long cook. Again, it’s hickory-smoked before blending, which means every granule carries that wood-fired character. The result is a garlic presence that feels earned rather than sharp or raw.
🌿 Ground Coriander — The Secret Weapon
This is the ingredient most people can’t name when they taste it — but they’d notice if it was gone. Coriander is citrusy, slightly floral, and earthy all at once. In a brisket rub it acts as a bridge, softening the harshness of pepper and salt while adding a subtle warmth that lingers after the bite. It’s a classic Texas pitmaster move, and it’s what separates a great brisket rub from a basic one.
🌾 Rice Hull (Anti-Caking Agent) — The Honest Filler
Most commercial rubs use silicon dioxide or other chemical anti-caking agents. Bunker uses rice hulls — the outer husk of a rice grain, ground fine. It’s 100% natural, flavorless, and its only job is to keep the rub free-flowing so you get a consistent application every time you reach into the jar. Nothing to hide, so we tell you exactly what it is.

This is our FAVORITE rub to put on steaks, potatoes, veggies, EVERYTHING and ANYTHING!
I totally agree with Heather, it tastes great on just about anything, one of my favorites is popcorn., but definetly will be on every steak I grill from now on.
