The Crispy Smoked Wings Method

Pat the wings very dry with paper towels. Toss them with a little oil, then coat them well with Birdie Rub. For the crispiest skin, set them on a rack in the fridge, uncovered, for a few hours or overnight. Smoke at 275°F for about an hour. Then turn the heat up to 400°F or move them over direct heat to crisp the skin. Pull them when they reach 175°F to 185°F inside. Wings stay juicy at that range, and the skin gets crunchy.

Holiday Turkey Tip

Mix 2 tablespoons of Birdie Rub into a stick of soft butter. Gently loosen the turkey skin and spread the butter underneath. Rub a light coat on the outside too. You get seasoned meat, not just seasoned skin.
